How to edit a Sim from live mode
Select the Sim. Open the cheat console with Ctrl + Shift + C on PC or Cmd + Shift + C on Mac, type sims.modify_in_cas and press Enter. Create a Sim opens for that Sim; make your changes and confirm to go back to live mode.
For a Sim's work outfit, type sims.modify_career_outfit_in_cas instead.
